Steel cut oats


Do you like steel cut oats? I love baked steel cut oats, but it’s very time consuming. It’s really hard to incorporate them into our weekday breakfast. So I started soaking them overnight with apple cider vinegar and cinnamon. It did cut half of the cooking time the next morning. And the good thing about them is that they don’t turn gluey and sticky after reheating. It’s a really easy, fulfilling, fun, and healthy breakfast option.

ingredients:

1 cup steel cut oats

2 cup of water

1 tablespoon apple cider vinegar

1 teaspoon cinnamon

Combine the ingredients in a glass container and cover with the lid. I normally leave them on the kitchen countertop overnight.

The next morning, pour the oats and the liquid into a sauce pan, and add 2 more cups of water. After the water boils, lower the heat and simmer them for about 30 minutes. They are creamy but still hold a bit chewy texture.

Here comes the fun part, the add-ins. My kids love and enjoy picking the add-ins. We eat them with fresh berries in the summer. In the winter time, we like dried cranberries or raisins, toasted pumpkin seeds, dash of cinnamon, and honey. This morning I had dried mango, unsweetened coconut flake, chia seeds, toasted pumpkin seeds, and more cinnamon. I normally eat them without honey as the apple cider vinegar and cinnamon already make them very flavorful. What do you like to add in?
